Nowadays, the management in the food sector is facing dynamics and complexity in supply chains more than ever. Managers need to figure out new sustainability issues in their company in order to gain a competitive advantage. Planning and design of a food supply chain are associated with an integrated and complicated decision-making process. To design and evaluate the performance of a food supply chain, different criteria and conflicting objectives must be integrated. Besides, the decisions need to be taken at different levels (strategic, tactical and operation) and stages (supplier, manufacturing, distribution, and transportation).Furthermore, the sector has been considered as the second biggest emitter of greenhouse gases after energy, and it requires cutting the emissions from its growth. Not to mention that food supply chains are heavily associated with social structures since many players and agents are involved in this system. However, there have been few attempts to optimize economic, environmental and social concerns simultaneously, especially in food supply chains. Incorporating sustainability dimensions into decision making and finding a trade-off between objectives are challenging. This is even more challenging when a supply chain deals with issues related to perishability and seasonality. Therefore, a decision support tool that can consider all these aspects is required.In this thesis, the aim is to propose a novel and more realistic approach to design sustainable supply chains. The primary objective of this thesis is to develop an integrated tactical-operational planning model for sustainable supply chains. First, we provide a supply chain model to support the tactical planning that integrates the three dimensions of sustainability: total cost, GHG emissions, and social responsibilities. Secondly, we extend our model in order to ensure a more realistic representation of the supply chain considered in this research by proposing a multi-objective optimization model. A solution methodology is developed to cope with multiple conflicting objectives in reasonable solution time. In addition, the operation of a supply chain network is simulated using a discrete-event simulation model to analyze the supply chain network configuration obtained from the tactical planning model. The tactical optimization model can get insights on the best network configuration which combined with the operational simulation model helps realize the practicability of a given configuration and sustainable strategy. Eventually, this study propose an integrated approach to validate the decisions made at the tactical planning level and ensure the feasibility of sustainability goals in both planning levels. This work gives researchers and practitioners insights on how to design/redesign a sustainable supply chain and evaluate supply chain performance in order to achieve sustainability goals.

De nos jours, la gestion du secteur alimentaire fait face a une chaine d'approvisionnement dynamique et complexe plus que jamais. Les gestionnaires doivent trouver de nouveaux enjeux de durabilite dans leur entreprise afin de rester competitifs et de repondre a ces changements. La planification et la conception d'une chaine d'approvisionnement alimentaire sont associees a un processus decisionnel integre et complexe. Pour concevoir et evaluer la performance d'une chaine d'approvisionnement alimentaire, differents criteres et objectifs contradictoires doivent etre integres. En outre, les decisions doivent etre prises a des moments differents (strategique, tactique et operationnel) et des niveaux (fournisseur, fabrication, distribution et transport). En outre, ce secteur a ete considere comme le deuxieme plus grand emetteur de gaz a effet de serre apres l'energie et il necessite de reduire les emissions de sa croissance. Sans oublier que les chaines d'approvisionnement alimentaire sont fortement associees aux structures sociales puisque de nombreux acteurs et agents sont impliques dans ce systeme. Cependant, il y a eu peu de tentatives d'optimisation simultanee des preoccupations economiques, environnementales et sociales, en particulier dans les chaines d'approvisionnement alimentaire. Integrer les dimensions de la durabilite dans le processus de prise de decision et trouver un compromis entre les aspects de la durabilite sont difficile. Ceci est encore plus difficile lorsqu'une chaine d'approvisionnement traite des problemes lies a la perissabilite, a la saisonnalite. Par consequent, un outil d'aide a la decision capable de prendre en compte tous ces aspects est exigeant.Dans cette these, nous visons a proposer une approche nouvelle et plus realiste pour concevoir des chaines d'approvisionnement durables. L'objectif principal de cette these est de developper un outil d'aide a la decision pour la conception et la planification de la chaine d'approvisionnement durable, en realisant un reseau de chaine d'approvisionnement rentable, respectueux de l'environnement et social. Premierement, nous fournissons un modele de chaine d'approvisionnement pour soutenir la planification tactique qui integre les trois objectifs de durabilite: le cout total, les emissions de GHG et les responsabilites sociales. Deuxiemement, nous etendons notre modele afin d'assurer une representation plus realiste de la chaine d'approvisionnement consideree dans cette recherche en proposant un modele d'optimisation multi-criteres. Une methodologie de solution est developpee pour faire face a plusieurs objectifs contradictoires a un temps de solution raisonnable. Finalement, nous developpons une approche integree pour valider les decisions prises au niveau de la planification tactique et assurer la faisabilite des objectifs de durabilite. Une combinaison d'outils de simulation et d'optimisation sera utilisee pour resoudre ce probleme. Ce travail donne aux chercheurs et aux praticiens des idees sur la facon de concevoir / redessiner une chaine d'approvisionnement durable et d'evaluer la performance de la chaine d'approvisionnement afin d'atteindre les objectifs de durabilite.
