The purpose of this Action Research study was to investigate and improve knowledge of the role school meal programs play for low-income students in an urban middle school and how expanding food preferences can improve dietary quality, which is essential for growth and development in adolescents. In Cycle 1, five major themes emerged as critical to successfully implementing a meals program that will positively affect students' diet quality: creating a culture, commitment of staff and faculty, restaurant quality food, expanding food preferences, and student engagement. Participants wanted to understand how to develop food preferences to improve dietary quality. Thus, the goal of Cycle 2, the action step, became ways to introduce new foods to adolescents through the school meal program, increasing diet quality. The findings indicated that school meal programs can improve dietary quality for students by encouraging them to try new, good-quality but unfamiliar foods and allowing them to have a say in what is being served. This agrees with Asada et al. (2017a), who noted that school meal programs can provide access to healthy food choices unavailable at home, especially for disadvantaged students. However, the student perception of school lunches (food quality, appearance, and taste) will determine meal participation (Tsai et al., 2019). Therefore, as Au et al. (2020) point out, by creating an environment where students can eat healthy foods and develop lifelong healthy eating habits, school meal programs can help promote children's long-term health.
